I made Vegan Potato Soup Tuesday evening and it was delish!
3 garlic heads
1/2 cup diced onion
1/2 cup diced carrot
1 garlic clove
3 cups diced potatoes ( I used Yukon Gold )
sea salt/fresh ground pepper to taste
bay leaf
1/2 cup soy milk
1/2 c fresh parsley ( this I did not have but I bet it would make the dish even better! )
Roast Garlic Heads in foil in the oven on Broil for 5 min. - mince into saucepan with olive oil
Saute Garlic/Onion/Carrot until a nice brown ( DO NOT BURN! )
In a large pot add potatoes, sauteed veggies and soy milk. Bring to boil for 5 minutes and then on low heat for 30 minutes until potatoes are tender. My "soup" had more of a "stew" consistency so if you want yours to be more of a soup you can cook longer and mash potatoes up.
I have a lot going on right now and although I tend to complain about it, I can actually say that everything I am doing, I am enjoying!
Wednesdays, I probably won't be blogging unless I come up with some clever Wednesday tradition like say... Wordless Wednesday that I have seen some bloggers do.
On Wed. I teach a Creative Movements class and I eat lunch with K and then I have my small group at church. So Wednesdays are entirely too busy and then when Thursday rolls around it seems I am playing catch up to all my chores and errands I have fallen behind on. Wednesday is a "hump" day right? Well it takes me quite a while to "roll" back down that hump on Thursday!
None the less... I would like to share what I have been doing the past few days.
At my small group on Wednesday we broke down this past Sunday's sermon " Tithing ". It is a touchy subject and many people feel turned away when they hear this word in church. After discussing the meaning of a tithe and why we do it, I felt so much more knowing on the subject. There was a lot discussed and questions answered and I would love to share with you everything but I will leave you with a word from the bible that our group leader shared with us. ( Please do not hesitate to contact me if you would like to discuss this further! )
Malachi 3:10 10 Bring the whole tithe into the storehouse, that there may be food in my house. Test me in this,” says the LORD Almighty, “and see if I will not throw open the floodgates of heaven and pour out so much blessing that there will not be room enough to store it.
The Lord tells us to TEST him... this is the one thing in our lives that we are actually encouraged to test God on... so I encourage you to take the challenge with me and try it out! Let's see if we are not blessed so fully that we will not even know what to do with all of our blessings! I have to tell you, looking at my life now, I am truly and fully blessed to the max... I cannot imagine feeling anymore blessed than I am now but I KNOW that through God all things are possible and HE will provide us with what we need and blessings beyond our wildest dreams!
Since I am on the subject of food... Tom and K have made Thursdays "Breakfast for Dinner" night. So... we had Vegan Pancakes ( Tom thinks that you just HAVE to put egg and milk into your pancakes but had no idea ). Kensey decided that the little "droppings" were kitty sized pancakes and fed them to our cat.
to stick with the "food" subject... our dear friends little girl just turned 2 and since she loved the felt foodies that made her for Christmas, I decided to make her a few more and put them all in her very own "green" bag... btw I just found a pea pod that I had made and forgot to add to the bag!
I had mentioned before that I help instruct a Creative Movements class... well Lynsey and I ( my bestie and dance partner! ) found some great DIY ideas for music makers and dance props! These little drums above are simply ( believe it or not! ) tin cans with a balloon stretched over the top and rice inside... they make the neatest sounds!

and then we got clever and decided to make our own bean bags... shhh don't tell anyone but these are really "rice" bags!
I told yall about The Great Create right? Well it is a really cool monthly crafting project that I am a part of and this month I was going to create a V-day garland for my mantle. K wants to decorate for V-day this year so I gathered a few things to make. I decided to make my Great Create buddy for the month a replica!
the little clothespins can hold pictures or V-day cards...
...and the pennants match the pillow I made! The material for the pillows are actually kitchen lines from Target!
*yawn* tired yet? just imagine doing all this stuff! so K's doll Hannah was due for some major hair repair. Kensey was so frustrated because she could not brush her dolly's hair... so Hannah Dolly is sleeping overnight
in the kitchen sink with conditioner rinse in her hair... and on that note... Goodnight!
